Mediterranean Diet Recipes
Mediterranean recipes that are both nutritious and delicious.
Broccoli Rabe
1 bunch of fresh broccoli rabe (this is a cousin of the more
familiar broccoli; if you’re not familiar with it, ask your grocer)
2 cloves garlic
1/4 cup olive oil
Directions:
Remove about two inches from the bottom broccoli stalk. Rinse and drain without patting dry. They should be wet when cooked.
Slice garlic thinly.
In large skillet, lightly brown garlic in olive oil. Add more oil if necessary.
Add broccoli and 1/2 tsp. hot red pepper flakes, salt and freshly ground pepper to taste.
Cover pot with tight-fitting lid and simmer over medium heat until
tender, stirring occasionally.
Serve as side dish or over pasta.
White Beans with Sage and Olive Oil
1 lb. dried Great Northern Beans
6 cups cold water
1/4 cup extra-virgin olive oil
1-1/2 tablespoons chopped fresh sage
1 large garlic clove, minced
Directions:
Place beans in large saucepan. Add enough cold water to cover by 3 inches and let soak overnight.
Drain beans and return to pan.
Add 6 cups cold water, 1/4 cup oil, chopped sage and garlic.
Bring to boil. Reduce heat to medium-low.
Cover and partially simmer until beans are just tender, stirring occasionally, about 45 minutes.
Season with salt and pepper.
Using slotted spoon, transfer beans to bowl.
Top with more oil.
Tuna with Tomato-Basil Sauce
2 tablespoons olive oil
1 large onion, thinly sliced
1/4 cup chopped celery
1/4 cup finely chopped parsley
1 garlic clove, chopped
1 1/2 lbs. ripe plum tomatoes, peeled and chopped
1 cup fresh basil leaves, torn into bite-size pieces
4-6 ounce tuna steaks (each about 1 inch thick)
Directions:
Heat 1 tablespoon oil in heavy large skillet over medium heat. Add onion, celery, parsley and garlic.
Sauté until onion is tender but not brown, about 10 minutes.
Add tomatoes. Cover and cook until sauce thickens. Stirring occasionally, about 15 minutes.
Mix in basil, saving a few leaves for garnish.
Season sauce to taste with salt and pepper.
Sprinkle tuna with salt and pepper.
Heat remaining 1 tbsp. oil in another heavy large skillet over
medium-high heat. Add tuna and cook until golden and just opaque in
center, about 3 minutes per side.
Transfer tuna to platter. Spoon sauce over tuna. Garnish with basil. This page last updated 2/12/08 04:08 PM
